Moffat just made HACCP Due Diligence Data logging easy
Catering equipment specialist E & R Moffat has launched a new ‘3D’ (‘due diligence data’) logging system for its range of foodservice trolleys and counters. And with cordless reading via a portable handset, and full archiving of up to 63 units simultaneously, the company says it is set to make HACCP data logging easier and more accurate than ever.
‘Due diligence data’ is getting harder to record and preserve accurately, and the problem compounds as organisations get larger and more staff are required to keep the data. It’s even harder where companies rely on staff filling in paper forms, since this method is open to human error.
“With automatically controlled systems such as the Moffat Chillogen becoming ever more popular, it’s clear we needed a new approach to 3D logging”, says Moffat’s sales director, Gary Allen. “So over the last year we’ve been creating a complete system to transfer data from onboard 3D recorders, via a remote handset, to back office computer logging.”
Three sensors in each Moffat 3D system record all required hot, refrigerated or ambient temperatures, in real time, second by second. It can record any transient rise or dip in temperature, such as when a door is opened, and the recovery time, and any malfunction in temperature control. The information is fully HACCP-compliant, accurate to +/-0.1C and calibrated accurately to full ISO 9003 standards.
At the heart of the system is a new portable infrared handset that can retrieve the data stored by the logging units. To operate, the handset is simply pointed at the infrared ‘window’ of the trolley or counter, and buttons are pressed on the catering unit to transmit and the handset to receive. The handset beeps when it has received the information correctly.
The handset can store the data for up to 63 trolleys, holding their entire 3D information going back up to two years. The reader has a waterproof screen and is designed to work in a catering environment (protected against grease and humidity). The use of infrared means there are no intrusive cable connectors to get obstructed by dirt or food particles.
Back in the manager’s office the data is easily downloaded to a computer. Windows software to monitor the data is included free, and it archives all the data for printout on demand.
The 3D option is available for most Moffat equipment including the Chillogen models.
“While there are other 3D loggers available, our new Moffat system has introduced several firsts”, says Gary Allen. “It’s the first portable system to use cable-free communication with the trolleys, it’s very cost effective, it’s extremely easy to use – it needs virtually no training to collect and transfer the data.
