Chillogen banqueting trolleys have changed the face of function catering by taking the kitchen to the banqueting room.
Moffat Catering Equipment has changed the face of banqueting with a broad choice of trolley systems that allow virtually any type of function to be serviced efficiently and profitably. The Moffat choice features its exclusive Chillogen system - which quick-chills, holds and regenerates plated meals automatically - as well as more conventional hot holding and regeneration trolleys.
The company broke new ground in banqueting catering in 2004 with Chillogen. As the name suggests, Chillogen contains both chilling and regeneration in a single mobile unit, and for many hotels and function suites it has revolutionised large-scale high-quality function catering. This is because a Chillogen trolley can effectively act as a 'kitchen extension', increasing production capacity and spreading the workload of banquets across both 'space' (storing the banquet meals away from the kitchen, since they are their own refrigeration cabinets) and 'time' (allowing preparation days in advance).
Chillogen has four separate functions combined into one - a rapid chiller, a refrigerator, a regeneration oven and a hot cupboard each as powerful as most single-use dedicated systems.
In use, the chef pre-chills the trolley, loads the plates and sets the rapid-chill mode to bring the food down to storage temperature (below 10 degrees Celsius in 90 minutes). Chillogen holds the food at the required temperature for as long as regulations allow several days if required. At the turn of a switch (or at a preset time) it turns into a regeneration oven, raising the food to serving temperature in around an hour. Regeneration is done to exact HACCP guidelines, while Moffat's exclusive Profile Temperature Technology guards against burning or drying of the food.
With 'due diligence' becoming an ever more important issue in function catering, Moffat has created its companion 3D logging system for the Chillogen systems, to simplify and extend record-keeping of food temperatures.
Electronic sensors automatically record the internal temperatures of the trolley chamber and food at regular intervals. The 3D logging bypasses the time-consuming and inherently inaccurate method of using a hand-held temperature probe and manually recording the results.
A single Chillogen system can hold anything up to 90 ten-inch plates (with covers) on 15 shelves, a substantial and immediate increase in kitchen capacity. A full load of plated meals can be regenerated in about one hour with an electric loading of 6kW. As a further space-saving feature the Chillogen has a split door that makes access easier in narrow corridors.
Its compact size and reasonable power requirements means the trolley can be plugged in anywhere where there is access to standard 13amp sockets. And once plugged in it can also be used as an extra fridge, an extra hot cupboard or as a regeneration oven. It even offers a rapid chill facility to cool down hot food.
There may also be sites when the full flexibility and versatility of the Chillogen system is not required. For example Moffat offers 'keep hot' versions of the trolley that simply maintain the dishes at serving temperature from the kitchen to the servery area, or straightforward regeneration trolleys designed to work in conjunction with blast chillers and blast freezers.
A full range of accessories is also available including a variety of plate covers (Moffat can supply customised versions of the covers), additional grid shelves, spare roll-in/roll-out internal racks, temperature retention covers, transfer dollies and internal food probes.
