THE CHILLOGEN TROLLEY, CHILLS, STORES AND HEATS

In busy periods, or whenever space is at a premium, Moffat’s Chillogen Trolley can effectively act as a kitchen extension. With overall dimensions of only 1370mm long x 880mm deep x 1695mm high the trolley can be plugged in anywhere where there is access to a standard 13amp socket. And once plugged in, it can be used as an extra fridge, an extra hot cupboard or as a regeneration oven. It even offers a rapid chill facility to cool down hot food.

The Chillogen Trolley chills, holds and regenerates cooked food all in the same compartment. It is easy to operate and can be used in any of its four discrete functions - regeneration oven, hot cupboard, rapid chiller and refrigerator – as powerfully as any standalone unit.

Although a single Chillogen unit takes up relatively little space, it can hold up to 90 ten-inch plates (with covers) on 15 shelves, a substantial and immediate increase in kitchen capacity. A full load of plated meals can be regenerated in about one hour with an electric loading of 6kW. As a further space-saving feature the Chillogen 90 has a split door for ease of access especially in narrow corridors.

The Chillogen can be used to chill, store and regenerate in one simple operation. The chef pre-chills the trolley, loads the plates and sets the rapid-chill mode to bring the food down to storage temperature (to under 10 Degrees Celsius in 90 minutes). It holds the food at the required temperature for as long as required or regulations allow – up to several days if necessary. At the flick of a switch it can be turned into a regeneration oven and to reheat the food to serving temperature in about one hour.
